Here in the good ol’ U.S. of A., we love our burgers, and there’s no better place to enjoy one than a summer cookout. Sure, you could go with the classic all-beef patty with lettuce, tomato and other typical toppings at your next gathering (and a couple shriveled veggie patties for your health-conscious friends as an afterthought.) Or, you can make your cookout one to remember with two equally delicious and crowd-pleasing burgers to satisfy every guest. Go big with a Jalapeño Bacon Burger, a not-so-healthy cheese-stuffed meat patty with a spicy kick, or go healthy with a Southwest Black Bean Burger, a savory veggie burger with a chipotle lime sauce so good even the biggest meat lovers will be coming back for seconds. So apron up, make a Snakebite and invite some friends over to let the debate begin.

GO BIG: Jalapeño Bacon Burger

Ingredients for 2 burgers:

For the patties:

  • 1.25 lbs. Hamburger
  • 1 heaping tbsp. pickled jalapeños
  • 1 tsp. tobacco
  • 1 heaping tsp. fresh minced garlic
  • 1 tsp. chili powder
  • 1/2 tsp. salt
  • 1/4 tsp. black pepper
  • Monterey Jack cheese w/ jalapeños

You’ll also need:

  • 6 strips bacon
  • Buns – we used onion rolls

Begin by mixing all patty ingredients for the burger except the cheese in a bowl. Once mixed, separate and create 4 burger patties. Place the cheese on top of one of the patties making sure to leave a little space around it. Place the other patty over the top and press the burger patties together around the edge making sure to create a nice seal, but don’t worry if a little cheese leaks out while grilling. Repeat for the second burger. Once you have the burgers stuffed and ready to go, grill at a medium heat and once the meat hits the grill, do not push down on the burger. When you squeeze out the juices and waste all that flavor, somewhere an angel weeps. While the burgers are cooking fry up the bacon, cut the rolls and brush with a little olive oil to grill up right before serving.

Serving

Dress the burgers however you want. I myself am a purist when it comes to burgers–meat and cheese only. But you can also top with:

  • Bacon
  • Lettuce, tomato, onion
  • Ranch dressing
  • Jalapeño relish
  • Mayo, mustard

GO HEALTHY: Southwest Black Bean Burger with Chipotle Lime Sauce

blackbean1Ingredients for 6 – 8 patties:

  • 2 15oz. can black beans
  • 1 15oz. can sweet corn
  • 1 4oz. can green chilies
  • 1 tsp. fresh minced garlic
  • 1 lime
  • 1/2 tsp. cumin
  • 1/2 tsp. coriander
  • 1 tsp. chili powder
  • 1/2 tsp. salt
  • Handful fresh chopped cilantro
  • 1 raw egg
  • 1 1/4 cup breadcrumbs

Start the black bean burger by putting the black beans, corn and green chilies into a bowl. Using your hands, mash the ingredients until the black beans are broken down. Next add the rest of the ingredients except the egg and breadcrumbs. Once the seasonings and lime juice are mixed in thoroughly, add the egg and mix again. Slowly add breadcrumbs until you have a texture you can begin to make patties with. Once patties are formed place a thin layer of breadcrumbs on a plate and cover both sides of the patties. Place the paties into a hot pan with your favorite cooking oil and brown both sides of the patties.

Chipotle Lime Sauce

Ingredients:

  • 1 cup Sour cream
  • 1 cup Greek yogurt
  • juice from 1 lime
  • 1 tsp. chipotle chili pepper
  • 2 tbsp. honey
  • pinch of fresh chopped cilantro

Combine all ingredients and mix well.

Serving:

Enjoy the burger with or without a bun, add a dollop of the chipotle lime sauce and top with some of our favorite toppings:

  • Guacamole
  • Salsa or pico de gallo
  • Fried or sunny side up egg
  • Shredded cheese
